Ingredients:

4 Zucchinis (sliced)

5 Shallots (chopped)

1/4 cup Parsley (chopped)

1.5 Tbsp Butter

1/4 cup Breadcrumbs

2 Cloves of Garlic (diced finely)

A splash of Olive oil

Salt

Pepper

 

 

Slice Zucchini in to 1/2 inch slices.  Add oil to a fry pan.  Saute zucchini’s in oil on a high heat for five minutes, tossing frequently. Sprinkle in salt and pepper to taste as you are tossing.

Add breadcrumbs and butter to the fry pan and cook until crumbs are brown.  Add in shallots and garlic.  Cook for a minute or two to take the rawness out of the garlic and then sprinkle with the fresh chopped parsley.

Add in Parmesan for a cheesy bite.  Fold in to cooked pasta and make it a main meal.
